I’m nearly there.
And boy don’t I know it! I always thought I’d be one of those pregnant women who could keep up the tempo right until the end but right now, if you’re not a pillow, I don’t have time for you…
I’ve been working really hard, pretty much tired myself out and with one week at work to go, I’m feeling like I need to really boost my energy levels.
I’m going to tell you something about me: I started out a few years ago writing a food blog which this year, was in the final of the UK Blog Awards, so yes, cooking is one of my passions.
But, as my circumstances changed, I found this new path to journey down which is Style Bump, and one of the things I want to incorporate is not just cooking, but food for the lifestyle which I am about to enter and food for my little one – I want them to grow up respecting food and to not be afraid of it.
I want to be as healthy as possible in these last four weeks – or perhaps six weeks if I go over...but let’s not think about THAT.
I’ve been rushed off my feet with no time to even contemplate cooking but today, on a rare Sunday where I actually have some time, I wanted to make some healthy snacks that any Mum-to-be can whip up.
So here’s to the first of many foodie posts and to the last leg of this pregnancy race!
Lets do this!
Banana, oat and coconut slices
1 cup of oats
2.5 mashed banana
2 tablespoons sultanas
1.5 tablespoons desiccated coconut
1/2 vanilla pod seeds scraped
Sprinkling of ground cinnamon
Pre-heat the oven to 180 degrees, fan oven.
Comine all the ingredients and mix until combined.
Line a square 8″ all round baking tray and pat the mix in to the tray until even.
Bake for 10-12 mins or until the mix feels firm.
Leave to cool (if you can…I couldn’t!) and slice in to 8 – 10 slices.
We all know what it’s like in the office at three p.m.
The slump arrives and you reach for all sorts of crap and trust me, it’s even worse when you’re preggers, so these little beauties should do just the trick!
